Prepare Potatoes

Wash the potatoes thoroughly and pat them dry with a paper towel. You can peel them if desired, but leaving the skin on adds extra texture and flavor. Slice the potatoes into thin fries, about 1/4 inch thick.

Soak Potatoes

If you have time, you can soak the sliced potatoes in cold water for about 30 minutes. This helps remove excess starch and makes the fries crispier. After soaking, drain and pat the potatoes dry with a paper towel.

Season Potatoes

In a large bowl, toss the sliced potatoes with olive oil, truffle oil, salt, and pepper until evenly coated. Adjust the seasoning to your taste preference.

Arrange on Baking Sheet

Spread the seasoned potato slices in a single layer on the prepared baking sheet, making sure they are not overcrowded. Overcrowding can prevent the fries from crisping up properly.

Bake

Place the baking sheet in the preheated oven and bake for about 25-30 minutes, flipping the fries halfway through the cooking time. Bake until the fries are golden brown and crispy.

Add Parmesan Cheese

Once the fries are cooked, remove them from the oven and sprinkle grated Parmesan cheese over the hot fries. Return the baking sheet to the oven for another 2-3 minutes or until the cheese is melted and slightly golden.
