Baked Triscuit Crusted Cod Recipe

Step 1 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

In a food processor or blender, pulse about 1 cup of Triscuit crackers until they are finely crushed. You can also place the crackers in a sealed plastic bag and crush them with a rolling pin.

Transfer the crushed Triscuit crumbs to a shallow dish or plate. Season the crumbs with your desired herbs and spices, such as garlic powder, paprika, salt, and pepper. Mix well to combine.

Rinse the cod fillets under cold water and pat them dry with paper towels to remove any excess moisture.

Dip each cod fillet into beaten egg, ensuring it's fully coated.

Next, dredge the egg-coated cod fillets in the seasoned Triscuit crumbs, pressing gently to adhere the crumbs to the fish.

Place the coated cod fillets onto the prepared baking sheet, leaving some space between each fillet.

Step 8 

Bake the Triscuit-crusted cod in the preheated oven for about 12-15 minutes, or until the fish is cooked through and the crust is golden brown and crispy.
