Blackened Salmon with Mango Salsa

1. Prepare the Salmon 

Start by rinsing the salmon fillets under cold water and pat them dry with paper towels. This ensures they are clean and ready for seasoning.

2. Make the Blackened Seasoning 

In a small bowl, mix together blackening seasoning ingredients such as paprika, garlic powder, onion powder, thyme, oregano, salt, and pepper. Adjust the quantities according to your taste preferences.

3. Coat the Salmon 

Rub the blackened seasoning mixture generously over both sides of the salmon fillets. Make sure the seasoning is evenly distributed to impart flavor throughout the fish.

4. Heat the Pan  

Heat a skillet or grill pan over medium-high heat. You can add a small amount of oil to prevent sticking if desired, but it's not necessary if your pan is well-seasoned.

5. Cook the Salmon 

Once the pan is hot, carefully place the seasoned salmon fillets skin-side down in the pan. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Be cautious not to overcook the salmon to maintain its tenderness.

6. Prepare the Mango Salsa 

While the salmon is cooking, prepare the mango salsa. Dice ripe mangoes and combine them with diced red bell pepper, red onion, jalapeño (optional for spice), chopped cilantro, lime juice, and a pinch of salt in a bowl. Mix well to combine all the flavors.

7. Serve 

Once the salmon is cooked to your liking, remove it from the pan and place it on serving plates. Spoon the freshly made mango salsa generously over the top of each salmon fillet.

8. Garnish and Enjoy 

Garnish the dish with additional cilantro leaves or lime wedges for added freshness and presentation. Serve the blackened salmon with mango salsa immediately while it's still warm, and enjoy the delicious flavors!
