Breakfast Stuffed Sweet Potatoes Recipe

Step 1 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Wash and scrub the sweet potatoes thoroughly under running water to remove any dirt or debris. Pat them dry with a clean towel.

Using a fork, pierce the sweet potatoes several times on all sides. This will allow steam to escape while they bake, preventing them from bursting.

Place the pierced sweet potatoes on the prepared baking sheet and transfer them to the preheated oven. Bake for about 45-60 minutes, or until the sweet potatoes are tender and can be easily pierced with a fork.

While the sweet potatoes are baking, prepare the filling ingredients. You can choose a variety of fillings such as scrambled eggs, cooked bacon or sausage, diced vegetables like bell peppers or onions, grated cheese, and any other toppings you desire.

Once the sweet potatoes are cooked, remove them from the oven and allow them to cool slightly until they are safe to handle.

Carefully slice each sweet potato lengthwise down the center, taking care not to cut all the way through. Gently fluff the insides with a fork to create space for the filling.
