Butternut Squash Mac and Cheese Recipe

Step 1 

Preheat the oven to 325°F (160°C). Place six ramekins in a deep baking dish and set aside.

Bring a large pot of salted water to a boil. Add the diced butternut squash and cook until tender, about 10-15 minutes. Drain the squash and set aside.

Cook the macaroni or pasta according to the package instructions until al dente. Drain and set aside.

In a saucepan, melt the butter over medium heat. Once melted, add the flour and whisk constantly for about 1-2 minutes to make a roux.

Gradually pour in the milk, whisking constantly to prevent lumps from forming. Cook until the mixture thickens, about 5 minutes.

Add the cooked butternut squash to the milk mixture and use an immersion blender or transfer to a blender to puree until smooth.

Stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.

Combine the cooked pasta with the butternut squash cheese sauce and mix until well coated. Transfer the mixture to the greased baking dish. If desired, sprinkle breadcrumbs on top for added texture.

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the cheese is bubbly.
