Step 1 

Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or non-stick spray to prevent the squash from sticking.

Wash the summer squash thoroughly under running water to remove any dirt or debris. Pat them dry with a clean kitchen towel.

Slice the summer squash into thin rounds or half-moons, depending on your preference. You can use a sharp knife or a mandoline slicer for even slices.

In a mixing bowl, combine the sliced summer squash with minced garlic, dried Italian herbs (such as oregano, basil, and thyme), salt, and pepper. Toss well to coat the squash evenly with the seasoning.

Transfer the seasoned squash slices to the prepared baking dish, arranging them in an even layer. Make sure they're not overcrowded to ensure even cooking.

Drizzle a little extra-virgin olive oil over the squash slices to help them cook and develop a delicious flavor as they bake.

Sprinkle shredded mozzarella cheese generously over the top of the squash slices, covering them completely. You can also add some grated Parmesan cheese for extra flavor, if desired.
