Cilantro Lime Chicken Thighs Recipe

1. Preheat the Oven  

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.

2. Prepare the Chicken 

Pat the chicken thighs dry with paper towels to remove any excess moisture. Season both sides of the chicken thighs with salt and pepper.

3. Mix the Marinade 

In a small bowl, combine the olive oil, minced garlic, ground cumin, paprika, and lime juice. Stir well to combine.

4. Marinate the Chicken 

Place the chicken thighs in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, making sure each piece is well coated. Allow the chicken to marinate for at least 30 minutes in the refrigerator, or up to overnight for maximum flavor.

5. Arrange on Baking Sheet 

Once marinated, remove the chicken thighs from the refrigerator and place them on the prepared baking sheet, spaced apart so they cook evenly.

6. Bake 

Transfer the baking sheet to the preheated oven and bake the chicken thighs for 25-30 minutes, or until they are cooked through and golden brown on the outside. The internal temperature should reach 165°F (75°C).

7. Rest and Garnish 

Once cooked, remove the chicken thighs from the oven and let them rest for a few minutes. Sprinkle chopped fresh cilantro over the chicken thighs for a burst of flavor and freshness.

8. Serve 

Serve the cilantro lime chicken thighs hot with your favorite side dishes, such as rice, quinoa, or roasted vegetables. Enjoy!
