Cilantro Lime Rice Recipe

1. Rinse the rice 

Place the rice in a fine-mesh strainer and rinse it under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky when cooked.

2. Cook the rice 

In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice, butter or olive oil, and salt to the boiling water. Stir briefly to combine.

3. Simmer 

Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer the rice for about 18-20 minutes, or until all the water is absorbed and the rice is tender.

4. Fluff the rice 

Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for about 5 minutes. Then, using a fork, fluff the rice to separate the grains and allow excess moisture to escape.

5. Add lime juice 

Drizzle the fresh lime juice over the cooked rice. The acidity from the lime juice adds a bright, refreshing flavor to the dish.

6. Chop cilantro 

Wash and finely chop the fresh cilantro leaves. You can include some of the tender stems for added flavor if desired.

7. Mix in cilantro 

Sprinkle the chopped cilantro over the rice and gently fold it in using a fork. The heat of the rice will help release the fragrance and flavor of the cilantro.

8. Garnish and Serve 

Transfer the cilantro lime rice to a serving dish and garnish with additional cilantro leaves if desired. Serve hot as a side dish with your favorite Mexican or Tex-Mex inspired dishes.
