Crispy Garlic-Parsley Potato Latkes

1. Prepare the Ingredients  

Gather all the necessary ingredients, including potatoes, garlic, parsley, eggs, flour, salt, pepper, and oil for frying.

2. Grate the Potatoes 

Peel the potatoes and grate them using a box grater or a food processor fitted with a grating attachment. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out excess moisture.

3. Chop Garlic and Parsley 

Finely chop the garlic cloves and fresh parsley. You can adjust the amount of garlic and parsley according to your taste preferences.

4. Mix Ingredients  

In a large mixing bowl, combine the grated potatoes, chopped garlic, chopped parsley, beaten eggs, flour, salt, and pepper. Mix everything together until well combined.

5. Form Latkes 

Heat oil in a skillet over medium-high heat. Take a spoonful of the potato mixture and form it into a patty shape. Carefully place the patties into the hot oil, flattening them slightly with the back of a spatula.

6. Fry Until Golden Brown 

Fry the latkes in batches, making sure not to overcrowd the skillet. Cook each side until golden brown and crispy, about 3-4 minutes per side.

7. Drain Excess Oil 

Once the latkes are cooked, transfer them to a plate lined with paper towels to drain any excess oil.

8. Serve 

Serve the crispy garlic-parsley potato latkes hot, either plain or with your favorite toppings such as sour cream, applesauce, or yogurt. Enjoy!
