Eggs Benedict with Avocado Recipe

Step 1 

Gather your ingredients. You'll need English muffins, eggs, Canadian bacon or ham, ripe avocados, lemon juice, butter, white vinegar, salt, and pepper.

Prepare the avocado mash by scooping out the flesh of the avocados into a bowl. Mash them with a fork until smooth, then add a splash of lemon juice to prevent browning. Season with salt and pepper to taste.

Toast the English muffins until they are golden brown. While they're toasting, heat a skillet over medium heat and lightly cook the Canadian bacon or ham until it's warmed through.

Fill a large saucepan with water and bring it to a gentle simmer. Add a splash of white vinegar to the water, which helps the egg whites to set quickly.

Crack an egg into a small bowl or ramekin. Then, using a spoon, create a gentle whirlpool in the simmering water and carefully slide the egg into the center of the whirlpool. This helps the egg white to wrap around the yolk.

Poach the egg for about 3-4 minutes, until the white is set but the yolk is still runny. Remove the egg from the water using a slotted spoon and drain any excess water on a paper towel.

Assemble the Eggs Benedict by spreading a generous amount of avocado mash onto each toasted English muffin half. Top each with a slice of Canadian bacon or ham, followed by a poached egg.
