Ground Turkey Stuffed Peppers Recipe

Step 1 

Preheat the oven to 375°F (190°C) and prepare a baking dish by greasing it lightly with cooking spray or oil.

Wash the bell peppers thoroughly under running water. Then, carefully slice off the tops of the peppers and remove the seeds and membranes from inside. Set aside.

In a skillet over medium heat, add a small amount of olive oil. Once the oil is hot, add diced onions and minced garlic. Sauté until the onions become translucent and the garlic is fragrant, usually about 2-3 minutes.

Add the ground turkey to the skillet with the onions and garlic. Break up the turkey with a spatula and cook until it's browned and cooked through, usually about 5-7 minutes.

Season the cooked turkey mixture with salt, pepper, and any other desired seasonings or herbs. Common options include Italian seasoning, paprika, or chili powder, depending on your taste preferences.

Stir in cooked rice or quinoa into the turkey mixture. This adds substance and helps bind the stuffing together.

Spoon the turkey and rice mixture evenly into each prepared bell pepper until they are filled to the top. Place the stuffed peppers upright in the greased baking dish.

Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes, or until the peppers are tender. Optionally, you can remove the foil during the last 10 minutes of baking to allow the tops of the peppers to brown slightly.
