Lentil & Mushroom Ragù

1. Prepare the Ingredients 

Gather all the necessary ingredients, including lentils, mushrooms (such as cremini or button), onion, garlic, carrots, celery, tomato paste, canned diced tomatoes, vegetable broth, olive oil, salt, pepper, and any additional seasonings or herbs you prefer, such as thyme or oregano.

2. Cook the Aromatics 

Heat olive oil in a large skillet or pot over medium heat. Add finely chopped onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are soft and fragrant, usually around 5-7 minutes.

3. Add the Mushrooms 

Once the aromatics are cooked, add sliced mushrooms to the skillet. Cook until the mushrooms are tender and have released their moisture, about 5 minutes.

4. Add the Lentils and Tomato Paste 

Stir in the lentils and tomato paste. Cook for another 2-3 minutes, allowing the lentils to absorb the flavors and the tomato paste to caramelize slightly.

5. Pour in the Liquid 

Pour in the vegetable broth and canned diced tomatoes with their juices. Stir well to combine all the ingredients.

6. Simmer the Ragù 

Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet or pot and let the ragù simmer gently for about 20-30 minutes, stirring occasionally, until the lentils are tender and the sauce has thickened to your desired consistency.

7. Season to Taste  

Taste the ragù and adjust the seasoning as needed, adding salt, pepper, and any other herbs or spices to enhance the flavor.

8. Serve and Enjoy 

Once the ragù is ready, serve it hot over cooked pasta, such as spaghetti or penne, or with crusty bread. You can also garnish it with grated Parmesan cheese or chopped fresh parsley for an extra flavor boost. Enjoy your hearty and nutritious Lentil & Mushroom Ragù!
