One-Pot Chicken & Cilantro Lime Rice Recipe

1. Prepare Ingredients  

Gather all the ingredients needed for the recipe: chicken breast or thighs, rice, chicken broth, lime juice, cilantro, onion, garlic, olive oil, salt, and pepper.

2. Season and Sear Chicken 

Season the chicken with salt and pepper. Heat olive oil in a large pot or skillet over medium-high heat. Sear the chicken on both sides until golden brown, about 3-4 minutes per side. Remove the chicken from the pot and set aside.

3. Saute Aromatics 

In the same pot, add a bit more olive oil if needed. Add diced onion and minced garlic, sauté until softened and fragrant, about 2-3 minutes.

4. Add Rice and Toast 

Stir in the rice to the pot, allowing it to toast slightly in the oil for about 2 minutes. This enhances the nutty flavor of the rice.

5. Combine Chicken and Rice 

Pour in the chicken broth and lime juice, stirring to combine. Return the seared chicken to the pot, nestling it into the rice mixture.

6. Simmer 

Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 20-25 minutes, or until the rice is cooked through and the chicken is tender.

7. Fluff Rice and Shred Chicken 

Once the rice is cooked, remove the pot from the heat. Fluff the rice with a fork and shred the chicken using two forks.

8. Serve 

Stir in chopped fresh cilantro, adjusting seasoning with salt and pepper if necessary. Serve the chicken and cilantro lime rice hot, garnished with extra cilantro and lime wedges if desired.
