Pesto Zucchini Noodles Recipe

1. Gather Ingredients 

Collect all the necessary ingredients. For this recipe, you'll need zucchinis, basil leaves, pine nuts, garlic cloves, Parmesan cheese, olive oil, salt, and pepper.

2. Prepare the Zucchini Noodles 

Use a spiralizer or a vegetable peeler to create zucchini noodles. If you prefer, you can also buy pre-spiralized zucchini noodles from the store to save time.

3. Make the Pesto Sauce 

In a food processor or blender, combine fresh basil leaves, pine nuts, garlic cloves, grated Parmesan cheese, salt, and pepper. Pulse until the mixture is finely chopped.

4. Drizzle in Olive Oil 

While the food processor is running, slowly drizzle in olive oil until the pesto reaches your desired consistency. Continue blending until the ingredients are well combined and the pesto is smooth.

5. Taste and Adjust 

Taste the pesto and adjust the seasoning as needed. Add more salt, pepper, or Parmesan cheese according to your preference.

6. Cook the Zucchini Noodles 

Heat a large skillet over medium heat and add a little olive oil. Once the oil is hot, add the zucchini noodles and sauté for 2-3 minutes, or until they are just tender.

7. Combine Noodles and Pesto 

Once the zucchini noodles are cooked, remove them from the heat and transfer them to a serving bowl. Add the desired amount of pesto sauce to the noodles and toss gently until they are evenly coated.

8. Serve and Enjoy 

Serve the Pesto Zucchini Noodles immediately, garnished with extra Parmesan cheese and fresh basil leaves if desired. Enjoy as a light and flavorful meal or as a side dish alongside grilled chicken or fish.
