Pulled Pork Quesadillas Recipe

1. Prepare the pulled pork  

Cook seasoned pork shoulder or butt in crockpot or oven until tender. Shred when done. Use fresh or leftover pulled pork.

2. Shred the pork 

Once the pork is cooked, let it cool slightly, then use two forks to shred it into small pieces. Discard any excess fat.

3. Prepare the quesadilla filling 

Gather your desired ingredients for the quesadilla filling. In addition to the pulled pork, you may want to include shredded cheese (such as cheddar, Monterey Jack, or a Mexican cheese blend), diced onions, diced bell peppers, sliced jalapeños, black beans, or corn.

4. Heat a skillet 

Place a large skillet or griddle over medium heat and let it warm up for a few minutes.

5. Assemble the quesadillas 

Lay a tortilla flat on a clean work surface. Sprinkle a layer of shredded cheese over half of the tortilla, leaving some space around the edges. Spoon a generous amount of pulled pork over the cheese. Add any additional toppings you desire.

6. Cook the quesadillas  

Carefully transfer the assembled quesadilla to the preheated skillet. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted and gooey. You may need to press down on the quesadilla with a spatula to help it cook evenly and adhere together.

7. Repeat 

Depending on the size of your skillet, you may be able to cook multiple quesadillas at once. Repeat the assembly and cooking process for each quesadilla until all of the filling is used.

8. Serve  

Once the quesadillas are cooked, transfer them to a cutting board and let them cool for a minute or two. Then, use a sharp knife or pizza cutter to slice each quesadilla into wedges. Serve hot with your favorite toppings and dipping sauces, such as salsa, guacamole, sour cream, or barbecue sauce.
