Roasted Eggplant Burgers Recipe

1. Preheat Oven 

Preheat your oven to 400°F (200°C) to ensure it's ready for roasting the eggplant.

2. Prepare Eggplant 

Wash the eggplant thoroughly and then slice it into thick rounds, about 1/2 inch thick. Lay the slices on a baking sheet lined with parchment paper.

3. Season Eggplant   

Drizzle the eggplant slices with olive oil and sprinkle with salt, pepper, and any other desired seasonings such as garlic powder, paprika, or Italian seasoning. Use your hands to rub the seasoning evenly onto both sides of the eggplant slices.

4. Roast Eggplant 

Place the baking sheet in the preheated oven and roast the eggplant slices for about 25-30 minutes, or until they are tender and slightly browned. Flip them halfway through the cooking time to ensure even cooking.

5. Prepare Burger Ingredients 

While the eggplant is roasting, prepare your burger ingredients. This might include slicing tomatoes, onions, lettuce, and preparing any condiments such as ketchup, mustard, or mayonnaise.

6. Assemble Burgers 

Once the eggplant slices are roasted to perfection, remove them from the oven and allow them to cool slightly. Then, assemble your burgers by placing a roasted eggplant slice on the bottom half of a burger bun. Add your desired toppings such as lettuce, tomato, onion, and any condiments.

7. Add Cheese (Optional) 

If you like cheese on your burgers, you can add a slice of your favorite cheese on top of the roasted eggplant slice while it's still warm. The residual heat will help melt the cheese.

8. Serve and Enjoy 

Place the top half of the burger bun on top of the assembled burger and serve immediately. Enjoy your delicious roasted eggplant burgers with your favorite side dishes or salads.
