Skillet Chicken Enchiladas Recipe

Step 1: Prepare the Ingredients 

Gather all the necessary ingredients: cooked shredded chicken, enchilada sauce, tortillas, shredded cheese, diced onions, diced bell peppers, diced tomatoes, minced garlic, and any other desired toppings like sliced avocado or chopped cilantro.

Step 2: Preheat the Skillet  

Preheat a large skillet over medium heat on the stovetop. You want it to be hot enough to cook the enchiladas but not too hot that they burn quickly.

Step 3: Sauté the Vegetables  

Add a bit of oil to the skillet and sauté the diced onions, bell peppers, diced tomatoes, and minced garlic until they are softened and fragrant, usually for about 5 minutes.

Step 4: Add the Chicken and Enchilada Sauce 

Once the vegetables are softened, add the cooked shredded chicken to the skillet along with the enchilada sauce. Stir everything together until the chicken is coated evenly with the sauce and everything is heated through.

Step 5: Prepare the Tortillas  

Warm the tortillas slightly to make them pliable. You can do this by heating them in the microwave for a few seconds or by quickly heating them in another skillet. This will make them easier to roll without tearing.

Step 6: Fill and Roll the Tortillas

Place a spoonful of the chicken and vegetable mixture onto each tortilla and sprinkle with shredded cheese. Roll up the tortillas tightly around the filling and place them seam-side down in the skillet.

Step 7: Cook the Enchiladas 

Cook the enchiladas in the skillet for a few minutes on each side until they are golden brown and crispy. This will also help melt the cheese and heat the filling throughout.

Step 8: Serve and Enjoy
