Squid Ink Pasta with Mussels Recipe

Prepare the Ingredients 

Gather all the necessary ingredients, including squid ink pasta, fresh mussels, garlic, shallots, white wine, cherry tomatoes, parsley, olive oil, salt, and pepper. Rinse the mussels thoroughly under cold water to remove any dirt or debris.

Cook the Pasta 

Bring a large pot of salted water to a boil. Add the squid ink pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking. Once cooked, drain the pasta and set it aside.

Prepare the Mussels 

In a separate large skillet or pot, heat a tablespoon of olive oil over medium heat. Add minced garlic and shallots, sautéing until softened and fragrant, usually for about 2-3 minutes.

Add Mussels and Wine 

Increase the heat to medium-high and add the mussels to the skillet. Pour in the white wine and cover the skillet with a lid. Let the mussels cook for about 5-7 minutes or until they open up. Discard any mussels that haven't opened.

Combine Pasta and Mussels 

Once the mussels have opened up, remove the skillet from the heat. Using a slotted spoon, transfer the cooked mussels to a plate, leaving the cooking liquid in the skillet.

Add Tomatoes and Pasta 

Return the skillet with the cooking liquid to medium heat. Add halved cherry tomatoes and cooked squid ink pasta to the skillet. Toss everything together gently to coat the pasta in the flavorful liquid. Cook for an additional 2-3 minutes until the tomatoes start to soften.

Season and Garnish 

Season the pasta and mussel mixture with salt and pepper to taste. Stir in chopped fresh parsley for added flavor and color.

Serve 

Divide the squid ink pasta and mussel mixture among serving plates or bowls. Arrange the cooked mussels on top of each portion. Optionally, you can drizzle with a bit of extra olive oil and garnish with additional parsley before serving.
